Whole Foods Vegan Sugar, not so good for Biscotti

The sugar crystals are just enough larger that they don’t dissolve fully into the batter, and then they melt and run out and caramelize when cooked. This might not matter for anything else.

It’s a bit of a shame, because, if you believe the package blurbs, this is harvested at kindler, gentler sugar plantations.
